to Antarctica. We provide sophisticated dining, wine and cocktails as well as promotion and curated tasting experiences for Tasmania’s many artisanal producers of artisan wine and spirits. Our award winning wine list showcases graceful wine, aromatic gin, artisan whisky and spirits from across Tasmania and beyond. Dive into some of the world’s most revered and challenging cold climate terroir with an emphasis on low input, organic, biodynamic farming and natural techniques. Masterfully crafted cocktails draw on classic roots inspired with Tasmanian flavour like smoked applewood salt, leatherwood honey and mountain pepperberry bitters. The Süd Polaire Antarctic dry martini topped with juniper mist foraged from the slopes of Mount Stuart is a house speciality. As the home of Domaine Simha wine and Süd Polaire spirits, our wine bar also serves as the face of our own cellar door sales activities. We produce Domaine Simha wine and Süd Polaire spirits to reflect some of the most pure terroir, sparkling air and ancient soil on earth. Our dedicated tasting room allows for in depth masterclasses, paired tasting flights and education sessions where we can deliver a layered story of Tasmania. Patrons benefit from learning about the diversity of local wine and spirits in context with leading international benchmarks. Our menu features authentic fare based on seasonal produce from local growers. For example Huon salmon tartare with sixty five degree kettering quail egg, burrata with local heirloom tomatoes and hemp oil as well as irresistible King Island beef tataki with shoyu cured yolk. We also deliver larger functions in our beautiful private event space.
